Bray Pepperoni Pizza Bake 10 Jan 12

  • 1 lb. very lean ground beef
  • 1 small onion – peeled and chopped
  • 2 jars pizza sauce (about 4 cups)
  • 2 cups baking mix (I use Jiffy mix or Bisquick)
  • 1 cup milk
  • 2 eggs
  • 1 ½ cups shredded cheese

 

  1. Pre-heat your oven to 350˚ for even, thorough baking.  Crumble the beef into a skillet – add the onion and sizzle up over medium-high heat 5 to 7 minutes, stirring occasionally, until beef is brown.  Drain into a colander and rinse with hot water.  Return to the skillet.
  2. Add the pizza sauce and pepperoni to the ground beef and heat until hot.  Spoon into ungreased rectangular baking dish.
  3. Stir baking mix, milk and eggs in a medium bowl until blended.  Pour evenly over pepperoni mixture.
  4. Bake uncovered 30 to 40 minutes or until the crust is light brown.  Sprinkle with cheese and serve.
