- 1 lb. very lean ground beef
- 1 small onion – peeled and chopped
- 2 jars pizza sauce (about 4 cups)
- 2 cups baking mix (I use Jiffy mix or Bisquick)
- 1 cup milk
- 2 eggs
- 1 ½ cups shredded cheese
- Pre-heat your oven to 350˚ for even, thorough baking. Crumble the beef into a skillet – add the onion and sizzle up over medium-high heat 5 to 7 minutes, stirring occasionally, until beef is brown. Drain into a colander and rinse with hot water. Return to the skillet.
- Add the pizza sauce and pepperoni to the ground beef and heat until hot. Spoon into ungreased rectangular baking dish.
- Stir baking mix, milk and eggs in a medium bowl until blended. Pour evenly over pepperoni mixture.
- Bake uncovered 30 to 40 minutes or until the crust is light brown. Sprinkle with cheese and serve.
